Homemade Easy Pumpkin Soup
Pumpkin.... my all time favourite. This pumpkin soup is super easy and super yummy. No stock, no cream required for my version of pumpkin soup. Just plain
fresh vegetable, plain water and spices, all natural goodness. Besides that, I add in some curry powder to further enhanced the smells and cayenne pepper for
a kick that are quite different from conventional pumpkin soup. You may leave this out though or change your own spices to the soup.
Ingredients:
200 grams Pumpkin
100 grams Carrot
100 grams Potato
80 grams Onion
2 cups Water
2 tbsp Olive oil
1 tsp Mixed spice
1 tsp Curry powder (optional)
1 tsp Cayenne peper (optional)
salt and pepper to season
How to do it?
Rougly chopped the onion, peeled and cut the vegetable in chunks.
Heat olive oil in the pot. Add in onion and stir until the onion is softened. Add in carrot and potato. Season with salt and pepper.Continue to cook until the vegetable is tender. Add in pumpkin and pour in the water. Bring it to a boil the reduce the heat and let it simmer until all the vegetable is soft.
Put the cooked soft vegetable in a blender, you might want to cool your soup a little before putting in your blender, add in the spices and blend until smooth. Pour it out to the pot again and re-heat it.
Serve the soup with parsley on top together with some toasted bread.
Enjoy! :)
