Sambal is sauce typically made from a variety of chili peppers and secondary ingredients such as shrimp paste, fish sauce, garlic, ginger, shallot, scallion, sugar, lime juice, and rice vinegar or other vinegars.
Sambal belacan is a Malay style sambal. Fresh chilis are pounded together with toasted shrimp paste (belacan) in a stone mortar to which sugar and lime juice are
added. Originally, limau kasturi or calamansi lime, is used but since this is scarce outside of Southeast Asia, normal lime is used as a replacement. It is normally eaten with cucumbers or ulam (leafy herbs) in a meal of rice and other dishes and I am going to share my fried rice recipe using this delicious sambal belacan.
Ingredients:
(A) Sambal belacan
3 Fresh red chilies, sliced
2 Dried chilies, sliced (optional)
4 Green bird eye chilies
3 tbsp. Toasted belacan
2 tbsp. Limau Kasturi (Calamansi Lime) juice / Lime juice
1 tbsp. Palm sugar / Brown sugar
(B) Fried rice
2 cups. Cooked rice
2 Eggs, lightly beaten
1 cup. Sweet corn kernels
1/2 cup. Grated carrot

How to do it?
Soak the dried shrimp for 30 minutes then pound in the stone mortar until you have a nice fluffy meat floss like texture. This step can be made ahead and put
it in the fridge.
To make the sambal belacan, put all the ingredients (A) above except lime juice and sugar into a stone mortar and pound into paste. Add in the lime juice and sugar to taste. If you are not a fan of hot and spicy, you may leave out the dried chilies and bird eye chilies and scrape out the red chilies seeds.
In a wok, heat a couple tablespoon of oil and fry the dried shrimps until fragrant, remove and set aside. Pour in the eggs and scramble it. When the eggs is half way cooked, add in the rice and stir quickly. Add in the sambal belacan and the dried shrimps. Stir well. Finally add in the corn kernels and grated carrot.

Cheddar Meltz Sardine Wraps
A very easy wraps recipe.
Ingredients:
2 no. Whole wheat tortilla
1 can Sardine in tomato sauce (155 grams can)
1/2 cup Onion, chopped
2 Red chilies, sliced
1/4 cup Corn kernel
1/2 cup Grated cheddar cheese
1/2 tbsp. Tabasco sauce
1 tbsp. Tomato ketchup
1 tsp. Paprika
1 tsp. Dried mix herbs
Black pepper to season.
How to do it?
Lightly break the sardine. Set aside.
Heat 1 tbsp. of oil in a pan and add in onion. Cook for 3 - 4 minutes until the onion has soften. Add in herbs, paprika, ketchup, Tabasco sauce, chilies and corn kernel then add in the sardine. Cook for another 5 minutes. Add in 1/2 of the cheese and stir until the cheese melted.
Divide the sardine onto the tortilla and sprinkle over the remaining cheese. Wrap and serve.

250 grams Vermicelli, soaked in boiling water until soft
1 cup Chopped cabbage
1 medium Red onion
3 cloves Garlic, chopped finely
3 tbsp. Oyster sauce
2 tbsp. Kicap manis (Sweet soy sauce)
1 cup. Water
2 no. Eggs, lightly beaten
How to do it?
In a pan, fried the beaten eggs and cut into strips. Set aside.
In a wok, heat the oil and add garlic. Stir for 1 minutes then add in the onion and cook until the onion soft. Add in cabbage, oyster sauce, kicap manis and water. Quick and easy recipe to replace traditional garlic bread toast. It is perfect for dips, soups or even on itself when you have party or movie night.
Ingredients:
6 slices Whole wheat tortilla, cut in strips
1/3 cup Olive oil
1 1/2 tsp. Dried Italian herbs
2 tsp. Grated garlic
Salt and pepper to season
How to do it?
Mix olive oil, herbs and garlic together and season with salt and pepper. Brush the mixture on every strips of the tortilla and bake it in the toaster oven for 4 - 5 minutes until the tortilla is golden brown. Let it cool slightly.

Creamy and cheesy comfort food that will be sensational on your table. It is so easy to put together and the best part it is vegetarian.
Ingredients:
1 cup Macaroni (Cooked till al dente according to the packet instructions)
1/2 cup Brocolli (Boiled)
1/2 cup Mushrooms (I stir fry a little bit with some onion)
1/2 cup Fresh Parsley (plus extra for the topping)
1/4 cup Breadcrumbs
1 cup Grated Cheese (plus extra for the topping I use cheddar cheese, but you may use any cheese you like)
60 gms Butter
1 1/4 cup Milk
1 1/2 tbsp Plain flour
1 tsp Ground Nutmeg
Black pepper to season
How to do it?
In a saucepan, melt down the butter. To the melted butter add the plain flour and stir fry until it become paste-like consistency.
Slowly add in milk, a little at a time, until it become a beautiful thick sauce. Add in the cheese and cooked for a few minutes until the cheese is melted. You should now have a beautiful creamy and smooth cheese sauce. Throw in the fresh parsley and continue to stir. Season with black pepper.
Next, add in macaroni, brocolli and mushrooms to the sauce and stir to coat everything with the sauce. Transfer it to a baking dish.
In a bowl, mix together the breadcrumbs with the ground nutmeg. Sprinkle the breadcrumbs on top of the macaroni. Top with fresh parsley and more cheese (depending how much you like). Bake it in the oven or just put it under the hot grill until all the cheese are melted and slightly
golden.
Enjoy while still hot :-)
Note: Add some bacon, ham, sausages or other meat if you like.

Beat two eggs lightly. Add in the vegetable oil gradually as you continue beating the eggs.
Add in the pancake mix and the water alternately until it is combined. You should have the pancake batter consistency.
Heat the pan and melt the butter. Spoon the batter onto the heated pan and cook the pancake until bubble start to surface. Turn the pancake to cook the
other side. Each side should roughly takes about 3 - 4 minutes.

How to do it?
Cooked the potatoes in boiling water for 20 minutes or until it is tender.
Mash the potatoes and set aside.
In a pan, melt the butter and add in crushed garlic. Stir for 1 - 2 minutes then add in cream. Stir well.
Pour the butter cream mixture to the mashed potatoes and add in Parmesan cheese. Season with salt and pepper.
